Hong Kong’s First Buddhist Vegetarian Custom Hot Sauce: Behind The Scenes At GFL

Green Fermentation Lab is heading to Vegetarian Food Asia this year with something completely new: a fully Buddhist vegetarian custom hot sauce created specifically for the show. This project started as a simple brief from the organisers and turned into a creative challenge that showcases what our team can do in custom hot sauce, custom recipes in Hong Kong, and B2B F&B collaboration.

Reimagining Our Signature Hot Sauce

Our classic hot sauces are known for its bright heat, layered flavour, and fermented depth. For this event, the organisers asked for a version that is truly Buddhist vegetarian – which means no pungent ingredients such as onion, garlic, leek, chive, or shallot. That removes many of the usual building blocks of hot sauce, so we rebuilt the flavor profile from the ground up.

The base of this new sauce is creamy avocado, chosen for its rich texture and neutral profile, which lets the fermented chilli character shine without the help of alliums. Layer by layer, our team used 15 years of F&B and recipe development experience to balance heat, acidity, umami, and freshness within these restrictions. The result is a hot sauce that feels indulgent yet clean, and pairs beautifully with plant-based dishes on tasting menus and at home.

How Custom Flavors Happen At GFL

This project is a good example of how custom flavors in Hong Kong can be developed when brand, values, and technical constraints all meet. Our process always starts with:

  • Understanding the client’s needs, audience, and dietary rules.

  • Mapping flavour targets (heat level, aroma, texture, pairing ideas).

  • Running lab tests, tastings, and stability checks to ensure the recipe works from kitchen to production.
